Perform a Fake shot close to the defender to trigger the animation
In PES 2021, if you go for a fake shot ("Square" while charging up and then "X" to fake it), your player will exit his shooting attempt and dribble to the side.
If you do this close enough to a defender, there is a very high chance of him trying to block the shot, going for an animation that temporarily glues him to the grass.
This is a very effective way of keeping your opponents out of the way this year.
